It’s official! Christmas is just around the corner here at at Sherwood Ranch!
This is our favorite time of the year and we start our Christmas season by making our Real Texas Christmas Tamales.
There is a lot of work that goes into making tamales and we have made it our own family tradition. First you have to be in the mood. Sometimes making tamales is really hard work and it works best when you have plenty of your favorite beverages handy. In years past, we spread the masa using a spoon. You have to spread the masa on evenly on the corn shuck and then get a proper amount of meat inside. Then you fold the corn shuck just right, making the perfect tamale.
I developed a real respect for the ladies at the Mexican Church in my hometown as they made many dozens of tamales at a time. I knew they had a special talent for spreading the masa. It also probably helped that they didn’t indulge in ‘my’ favorite beverages while they are making tamales. But, that’s just part of the tradition here.
Two years ago, a lady from Corpus Christie wrote and told me about the masa spreader she had invented. She sent me one and my life has not been the same since. The masa spreader took all the major work out of making tamales and it made such short work of the tedious part, that I also did not indulge so much myself. We actually finish making tamales long before I was ready to quit.
This year was no exception and we made short work of the tamales.
