Real Texas Jalapeño Mayonnaise

David here:  No, this is not a food blog, but we are compiling a book we will call Real Texas Recipes.  It’s in the design stages and we’re trying to get a lot of the preliminary work done.  Look for a new Texas style recipe at least once a week, but no, this will not be a primarily a recipe or food blog.  It’s just that Ramona is such a ‘foodie.’  Not that I’m complaing too much.

Real Texas Jalapeño  Mayonnaise is a ‘must have’ condiment in our house.

We like a little spice to our food like sandwiches, potato salad, or any food I use mayonnaise on, I replace it with Real Texas Jalapeño  Mayonnaise.

Real Texas Jalapeño Mayonnaise

Ingredients

1 cup real Mayonnaise
3 – 4 fresh Jalapeños, seeded and halved
Salt and Pepper to taste

Directions

Put Jalapeños in a food processor and puree.

This is how it should look like. It’s not a puree paste. It’s just finely chopped Jalapeño.

Add mayonnaise. I would suggest using real mayonnaise because you need some of the fat and flavor to make it really good. Add kosher salt and black pepper. After you mixed it this is how it looks like.

This is my Real Texas Jalapeño Mayonnaise.

Hooray for you for doing a cookbook. You can sign me up for a copy of Real Texas food! I did one for my family using Blurb. It was fun and it made a great gift, albeit an expensive gift. But hey…when it’s family it’s okay. Besides, it had family pictures in it too.
