In addition to enjoying homemade Salsa or Picante Sauce, every Texan should know how to make Guacamole.
And…Every Texan has their own recipe.
This is a simple but delicious Real Texas Guacamole recipe.
Ingredients
2 Avocados
1/2 teaspoon fresh Lemon Juice
1 small Tomato, finely chopped
Salt and Pepper to taste
1/4 teaspoon fresh Garlic, minced
1 fresh Scallion, minced
1 tablespoon fresh Cilantro, finely chopped
Directions
Remove the skin and pit from the avocado and put it in to bowl. Take a fork and mash the avacodo.
Add lemon juice, salt and pepper. Add finely chopped tomatoes to the mixture and stir.
Add minced garlic, finely chopped scallion and fresh cilantro to the mixture.
Refrigerate in an airtight container. This will prevent it from turning brown.

Here is another way to have avacoda:
First cut avacodo in half and remove seed, before you spoon out the avacodo remove all but about a 1/4″ of the avacodo with a spoon which will still have the avacodo in the skin. Being real easy and remove the rest of the avavodo making sure it comes out whole, then do the same to the other 1/2. Then you can stuff it with anything you like and then put the avacodo back together with the stuffing inside and roll in flour, the dip in pet milk and then back in flour or bread crumbs and fry at 350 until brown. Be sure and have your stuffing already cooked. I like to make up shrimp or crawfish etouffee. You can use what ever you like to stuff the avacodo even a good sausage that has been cooked mixed with a little rice, and then use as a stuffing for the avacodo. Enjoy Walter

I once had a Mexican lady cook for a party and her guacamole was the best I ever had. When I asked her how she made it she said you start mixing the ingredients, alvacado, jalapeno, tomato, onion, lemon juice and garlic. Then you just mix and taste and mix and taste and after awhile it’s guacamole! Ans she was right.
