Real Texas Breakfast Tacos

I made David these Real Texas Breakfast Tacos, and I have created myself lots more work!

He now is always asking when I’ll be making more!

Real Texas Tacos, are quick, easy to make and delicious!

Ingredients

1/2 pound Chirozo, ground

1 tablespoon Oil

2 red Potatoes, diced

1 Jalapeno, minced

1/4 cup Chicken Stock

1/2 small Onion

1 tablespoon, Cilantro

2 Eggs

Cheddar Cheese, shredded

1 Avocado, diced

homemade Real Texas Salsa

6 Corn Tortillas

Directions

Take the corn tortillas, place in a pan with hot oil to fry them.  A few seconds in the hot oil bend them over and hold open a little with the thongs making into a taco shell.

Continue to fry both sides of the folded corn tortilla until just a little golden.

Place on a paper towel to dry.  The taco shells will get crispy as they cool.

Brown the chorizo and remove it from the pan, set aside.

Add butter to the pan; add chopped onion, minced jalapenos and sauté the mixture for few moments.Add chopped red potatoes with skin on, sauté the red potatoes until they brown.

Add chicken or beef broth to the pan.Turn the burner down and allow the mixture to simmer until the liquid in the pan is reduced, which takes about 5 to 10 minutes.

Once the liquid is reduced in the pan, add the browned chorizo, turn the heat up and stir. Add slightly beaten egg, stir and cook until the egg is cooked.

Fill the taco shells with the chorizo potato. Add some cheese, avacodo and picante sauce (all to your preference) to the taco shell.
