Real Texas Sweet Basil Breakfast Pies

Ingredients

1/2 pound sausage, crumbled

1/2 pound bacon, diced

1/2 cup Jalapeno, minced

1 can Biscuit dough, flaky

3 Eggs, beaten

3 tablespoons Milk

1/2 cup Mushrooms, diced

1/2 cup Green Onions, diced

3 tablespoons Sweet Basil, finely chopped

1 cup Cheddar Cheese, shredded

Directions

Preheat oven to 400 degrees F

In a large skillet over medium-high heat, cook, sausage, drain, set aside. Do the same for bacon, jalapenos, mushrooms, and green onions. Cook separately with a little bit of butter for the vegetables.

Separate the dough into 10 individual biscuits, then separate each biscuit into 2 biscuits. (peel the biscuits in half). Flatten each biscuit and line the bottom and sides of a sprayed muffin pan. Put a pinch of the finely chopped basil in the biscuit cup.  Evenly distribute sausage or bacon mixture and the vegetables between the muffin cups. Mix together the eggs and milk and divide between the cups. Sprinkle tops with shredded cheese.

Bake in preheated oven for 18 to 20 minutes, or until filling is set and doesn’t jiggle.
