In Texas we love corn! Fresh sweet corn can be fixed so many different ways. This corn recipe is a quick side dish and is so tasty!
Tip: When you are taking the kernels off the corn cob, you can leave the stem on the corn cob to use as a handle, and hold on a cookie sheet. Using a large knife to scrape the kernels off the corn cob.
You can add other fun ingredients to this corn recipe too! I’ve gotten really creative and everyone loves the variations. I would love to hear your ideas too in the comments.
Real Texas Cowboy Corn Casserole
2 cups fresh Corn
1 small Red Bell Pepper, chopped
1/2 Texas 1015 sweet Onion, chopped
3 medium Jalapenos, minced
1 tablespoon minced Garlic
Salt and Pepper to taste
1/4 cup melted Butter
1/4 cup chopped Texas Pecans
Preheat oven to 350F degrees. Spray a square cooking dish with oil and set aside.
Mix in a medium bowl all the ingredients except for the melted butter and pecans. Pour into the cooking dish, drizzle melted butter and sprinkle pecans on top.
Bake in oven approximately 30 minutes or until corn is tender and bubbling.

Sounds like a great casserole Ramona. I will give it a try. Another really easy corn recipe is put several fresh ears of corn in a bucket of water for at least an hour and then put it on the back of your upper grill where you are smoking your meat and just let it steam. Leave it on for an hour or so and take it off and let your guests shuck it, butter it, salt and pepper it and then eat it all up.
That sounds great! I’ll try it. I usually shuck the ear of corn, put some butter in and wrap in foil. I like your idea…your way is pretty much how my favorite corn roasters at festivals do it, and it’s soooo sweet and delicious!
