Ramona is still cooking for Christmas. That’s a good thing!
From Ramona: I remember my mom used to always make Banana Nut Bread. This recipe was her mom’s recipe.
I have enjoyed making this recipe over the years, and now have found a secret ingredient (it’s farther down in the recipe) that makes it even more delicious!
Right out of the oven, we used to slice and either spread real butter or cream cheese on it and eat hot.

Real Texas Banana Nut Bread
Ingredients
1/4 cup Shortening
1/2 cup Sugar
1 Egg, beaten
1 cup Bran
2 tablespoons Water
1 1/2 cups Bananas, mashed
1 1/2 cups Flour
2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1 1/2 teaspoon Singing Dog Vanilla Bean Paste (you can substitute Vanilla Extract)
1/2 cup Pecans, chopped
Directions
Take flour, baking powder and baking soda. Use a fork and stir together. Set aside.
Mix shortening and sugar. Cream it together to make it fluffy. Add well beaten egg and bran and mix.
Alternately add bananas, water and dry flour mixture. Mix all together. A little tip: Always have fresh bananas in your kitchen because it’s a really great healthy snack and you can ripen them and freeze to use for your banana bread.
My secret is Singing Dog Vanilla Bean Paste. Use this instead of vanilla extract and it just adds a totally different flavor. Add extra vanilla bean paste and mix that in. Fold in the pecans.
Spray the bread pan with Pam and preheat the oven at 350F degrees. Pour the bread dough into the pan. If you’re making multiple loaves, its best to make 1 loaf at a time. You can bake them together but mix them 1 loaf at a time.
Bake it for about 1 hour or until when a cake pick or a toothpick goes in and comes out clean.

Ramona’s bannana breads are just delicious ! it’s been 10 years i didn’t have a piece, but when i watched the video it reminded me the taste of that delightfull cake !

This is how I stole David’s heart! When we first met, I cooked my way into his heart….I almost lost him when I used the wrong liqueur in a pie. I called him at midnight to see if he had tried the pie. He said he hadn’t (I found out later that he had!) and I told him to throw it out and not taste it. I was so embarrassed.
We’re going on 11 years and he still loves eating my cooking! 🙂

Hi Ramona!!!! I needed the Banana Bread recipe!! We recently had a house fire (dishwasher caught on fire). Our kitchen was totally destroyed and the rest of the house suffered smoke and water damage. We are in a rent house and will be for about 4 months. All my recipes were, of course, in the kitchen!!! We won’t know what is salvagable until the cleaning company and the ozone chamber do their thing!! Meanwhile, at this food oriented time of the year, my favorite recipes are gone. Do you have one for hot chocolate? I did, but………. keep the recipes coming!!!! Merry Christmas!! Sandy
Hot Chocolate:
Ingredients
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
1/2 cup unsweetened cocoa
1 1/2 teaspoons vanilla extract
1/8 teaspoon salt
6 1/2 cups hot water
Mini marshmallows (optional)
Directions
In large saucepan over medium heat, combine sweetened condensed milk, cocoa, vanilla and salt; mix well. Slowly stir in water. Heat through, stirring occasionally. Do not boil. Top with marshmallows, (optional). Store covered in refrigerator.
It’s not low fat, but soooo goood! 🙂
I can’t use this recipe, as my wife will eat the Eagle Brand with chocolate syrup and I never have enough
